Being surrounded by sweet treats this holiday season naturally makes me want to indulge. But I also know I can give myself a belly-ache if I eat too many sugary snacks! So I set out to find a middle ground. Something delicious, but something that also that had less sugar.
That led me to these apple oatmeal cookies! We used this recipe from Live Well Bake Often, and they were so good! The cookie recipe itself only calls for ¾ cups of sugar, and I made 36 smaller cookies, so I’d say that definitely fit my requirements! But most importantly I thought they were delicious! I think they get most of their flavor from the apple itself! And as an added bonus the apple keeps the cookies soft for days. I may or may not know that because I was eating these cookies for breakfast! Hey, they’re apple and oatmeal! That is breakfast food!
The hardest part about making these cookies was my own patience. I didn’t realize the dough needed to cool in the fridge for at least thirty minutes! It was torture! But I almost made it that long! I put them in the fridge to cool for the length of one episode of F.R.I.E.N.D.S. and then pulled them out. When I was putting them on the tray they did separate a little bit. But they cooked perfectly so I think that might just be what happens with oatmeal cookies!
I wasn’t the only one to love these cookies! My whole family thought they were delicious! Especially JT who doesn’t love really sweet desserts, so he thought they were a great middle ground! Since everyone loved them I’m counting this fall apple recipe a win! Unlike the attempt I made at making sugar cookies – another cookie that needs to be refrigerated! I think we will definitely be making these again!
